The functional water is the water solution treated in verifiable scientific processes and containing usable functions. It is necessary to clearly explain the theorems of producing functional water, specifications of functional water and water generators, verification of the third party, and other data, scientific bases and methods related to functions for the general public.

In general, the functional water is the treated water solution with usable functions and properties different from ordinary drinking water. In the 21st century, the water which is not clearly verified by scientific methods or alleged by unscientific methods is not taken as the true functional water. The differences between scientific and unscientific functional water are shown in Table 1. Table 2 presents the examples of so-called functional water, most of which is inconsistent with the above definitions or conditions except electrolyzed water (Tables 3 and 4).

With limitless potentials, the functional water will contribute to human beings. We are looking forward to the effects of functional water on microbes, animals, vegetables, sanitation, medical treatment and health. In the 21st century, there are more and more people in scientific, technical and social communities committing themselves to human health and our environment quietly.
After being electrolyzed by D.C. negative ions in water (X-) would approach the anode while positive ions (M+) would approach the cathode.
If the voltage gets higher, water would be recomposed at the surface of electrodes, which could generate OH-,positive ions, increase DO ( dissolved oxygen),and finally produce Alkaline Ionized Water in the high pH level.

Alkaline ionized water is electrolyzed from water in which calcium is added.
During the electrolysis process, the water molecules will be recombined to small cluster water. The alkaline ionized water is small cluster water, which can be measured by the NMR (Nuclear magnetic resonate spectrograph): the tap water is about 118Hz (PIC. 1); The mineral water is about 119Hz (PIC.. 2); and the pH9 of alkaline ionized water (PIC. 3) is about 52Hz. Easily absorbed by human body, the water with small cluster water is helpful for metabolism and can remove acidic substances and wastes from human body, therefore enhancing the inner environmental system, properly adjust the acidic physical condition and improve our health!

Alkaline ionized water is alkaline water which H3O+ and OH- gather at the cathode, which contains hydrogen ions, so it’s also called active hydrogen water. Some researches indicated that hydrogen molecules can prevent oxidization and anti-aging and remove free radicals (active oxygen), thus improving our health and good for daily healthcare.

Calcium in the water will be generated into calcium hydroxide after electric decomposition, and quantitative of calcium hydroxide benefits health for intestine and stomach problems.
Some of mineral substances or calcium needed by human body should be gained from daily water intake. The mineral substances in water (calcium, magnesium, potassium and sodium) can be ionized after the electrolysis process and will be easily absorbed by human body; therefore, the alkaline ionized water with constant mineral substances can help the adult, children, and the elderly absorb mineral substances and calcium, which can improve their health and benefit the forming and growth of their bones to keep a daily healthy.

Osteoporosis, a disease with fragile bones attributed to bone loss and degradation of osteal micro-structures, has attracted more attentions recently. As one major reason of osteoporosis in the past, calcium-metabolic anomaly stems from calcium deficiency, low intestinal calcium absorption efficiency, and increased calcium in urine. Further, bones support our body when healthy bones metabolized regularly absorb old bones for growth of new and robust ones.
With advances of technologies, we have understood growth of bone cells in different stages including activation, resorption, reversal, matrix synthesis, mineralization in remodeling of bones. Additionally, the other influential function of bones includes storage of mineral substances which is supplemented by functions of intestinal tracts and kidneys for control of the calcium concentration in blood. When bone metabolism is abnormal, the bones will be changed in shapes.
The journal published in 25th Japan Medical Conference General in 1999 conducted an analysis on the influences and the efficiency of the bone metabolism according to Histology. The journal conducted a comparison research on the changes of the bone formation according to Morphology and Dynamics after mice were fed by alkaline ionized water, tap water and calcium lactate water.
The research showed when the feeding stuff has sufficient calcium, the bone formation is improved by the order: tap water < calcium lactate water < alkaline-ion water.
Conclusion: We believe that the alkaline-ion water can effectively improve the bone formation when the feeding stuff fails to provide sufficient calcium.
Modern medicine proves that keeping human body in an alkalescency condition is closely related to a good health.
After alkaline ionized water is processed by the electrolysis process, hydrogen will be generated at the cathode; therefore, the water around the cathode will become alkaline. Hydrogen is considered helpful for health. After water is processed by the electrolysis process, hydrogen will be generated to form OH-, so the water around the cathode will become alkaline. To reach electrical neutrality, the cations, such as Ca2+, will move to the cathode, and OH- will move to the acidic side. Besides, H+ will also move to the cathode side from the acidic side. The pH of the alkaline ionized water will be determined by balancing mobility and stability of these substances. If the current of the electrolysis process increases, the generation speed of OH- will be increased, and the flow speed of the fluid will be slowed down; in this way, the pH will increase. The relevant researches showed that alkaline ionized water can provide healthcare functions and is very helpful for our health.
Alkaline-ion water has small cluster, which has a better osmolality and can activate our taste buds to allow us to enjoy water’s deliciousness; therefore, it is very suitable for making tea, coffee, and delicious cuisines to highlight the deliciousness of foods. Many 5 star hotels and high grade Japanese restaurants equipped alkaline ionized water to make various delicious cuisines. As we knew the USA, Canada, The United Kingdom, France or the European Union (EU), Japan, Taiwan, Australia, New Zealand, China, Vietnam etc. The Drinking water (after treated) or bottled drinking water has no pH limitation of 6-8.5.
However we received few of customers responses that their government has the pH of 6-8.5 limitation on bottled water and felt quite confuse.
For this we would like to indicate the Tap Water Law and Bottled Water Sanitary Standard related in Taiwan and drafted this explanation for the pH issue of bottled water. We hope this can be help for your country.
Water is the fountains of human beings’ lives. According to scientific measurements, water account for two thirds of an adult’s weight and up to 80% of a child’s, respectively.
